Ultimate sharpening on a whetstone
To keep Japanese knives sharp one can use a whetstone. In this video, we use a combination of MAC granule whetstone 800/6000. In order to keep the grindstone flat, you can use a coarse grit whetstone 220, or a so-called 'stonefixer'. Both whetstones and stonefixer can be found here :
